  • from −10 to −18 degrees- average temperature range. Suitable for long-term (up to six months) storage of raspberries, strawberries and other soft berries. The absence of strong cooling allows you to preserve the pulp without damage;
  • from −18 to −23 degrees— a mode suitable for quick freezing and long-term (up to 9 months) storage. Unfortunately, such extreme temperature treatment can lead to the fact that too juicy berries are deformed after defrosting due to the rupture of the cell walls by large ice crystals.

The mode is also determined by the capabilities of the freezer. So before you start preparing, carefully read the instructions for the freezer and choose which compartment you will place the berries in.

How to freeze different berries

In principle, there are no particular difficulties here, but each variety has its own little tricks:

Strawberry It's best to freeze it whole - this way it retains more juice. We freeze in two stages: first we freeze the berries, laying them out in one layer on a flat surface. After this, we put the frozen strawberries in containers and store them that way. This approach allows you to reduce the number of deformed and damaged berries to a minimum.

Currant- both black and red - freeze perfectly in dry form. We separate the berries from the stems, remove the damaged ones and put them in bags. If you do not press down, then after freezing the currants will be intact and retain all the juice.

Gooseberry can be stored in the same way as currants - only the temperature for freezing should be lower.
