Baking recipes with tomato brine. Lenten cookies with tomato brine

Good day!

Today a friend came to visit me and brought me cookies, but they were unusual, they were made using brine, something I once ate as a child. I remember my mother used to bake them during “hard times”. In general, nostalgia washed over me and I decided to make this collection. Have you eaten such buns at least once? If not, be sure to use these simple recipes and you will have an awesome snack today.

After all, such cookies turn out very tasty and special. The point here is precisely the secret ingredient, which gives them this charm. It turns out crumbly and tender, and certainly melts in your mouth. In general, I recommend trying it and writing your impressions at the bottom of the article.

By the way, brine is used at least. Therefore, do not pour it out if you have any left over from a snack, especially if you need to quickly whip up something. This idea is great and as simple as two. Rest assured, you will definitely like it. I even came across options for making buns using this wonderful elixir).

If you are still against such cooking, then I have options on my blog that will not leave anyone behind.

I think that you have more than once had the feeling that you want something sweet, but you don’t have the right products. This recipe can help you out in difficult times. After all, all the ingredients are cheap. And it will turn out to be two in one, quick and tasty.

Advice. Besides, if you add something of your own, for example, maybe you have raisins or prunes lying around in the kitchen, it will turn out even better.

The other day we made some with nuts and cut out animals with the boys and put a nut in their paws. What ideas do you have to turn an ordinary treat into something special?

We will need:

  • cucumber pickle - 1 tbsp.
  • granulated sugar - 1 tbsp.
  • flour - 2.5-3 tbsp.
  • refined vegetable oil - 2.5 tbsp
  • baking soda - 0.5 tsp

Stages:

1. You need to combine all the ingredients in a cup; to do this, first pour the brine into it. Now add baking soda and stir with a fork. Then add granulated sugar and stir again. Add vegetable sunflower oil (if not, you can use olive oil), stir.

Add wheat flour in small parts and thus knead a not too thick dough.

Important! It should not stick to your hands, but do not fill it with flour, otherwise it will be too dry.

2. This is the lump you get from ordinary and simple products. Cover it with film or a clean towel and let it rest for literally 20 minutes.

Use a special mold or use it the old fashioned way to squeeze out the desired shapes in a stack.

When all the flowers are ready, place them on a baking sheet greased with vegetable oil.

4. Place the cookies in the oven when they have stood and warmed up to a temperature of 180 degrees. Bake at the same temperature until done (about 20 minutes).

Advice! For those who like it toastier, you can hold it for another 5 minutes.

4. And this is the result that will await you, aromatic and with an unusual salty-sweet taste. Pleasant discoveries and fun tea with friends and family.

Tomato brine cookies - recipe with description

The next option is no worse or better than the previous one. But the taste will of course be different and the point here, of course, is the brine itself. The sweeter it is, the baked goods will be like that; if the tomatoes are salty, then of course such a taste will be felt in the finished product. But, believe me, such a delicacy is eaten quite quickly anyway.

Our family prefers the option with tomato brine, but which one do you prefer? Write your reviews and comments below the note. I will be grateful and grateful.

We will need:

  • pickled cucumber brine
  • olive oil or sunflower oil - 3.5 tbsp
  • granulated sugar - 3.5-4 tbsp
  • baking soda - 0.5 tsp
  • flour - 245 g

Stages:

1. Prepare all the necessary ingredients that you see above and knead the dough. Do not add the flour all at once, but in parts so that lumps do not form.

Tip of the day! To make the baked goods more airy and fluffy, sift the flour through a sieve a couple of times before kneading.

2. After the dough is ready to use, roll it out on a silicone mat into a flat cake 0.5 mm - 0.7 mm thick and start kneading. Use hearts, Christmas trees and a month. Or maybe you have little animals or cars. In general, cut out any shapes.

If there are no such molds at all, then you can cut them into squares with a regular knife or squeeze them into circles with a glass.

4. Bake in the oven until golden brown at 180 degrees. Afterwards, you can serve it beautifully and you won’t even guess what).

5. Sprinkle with powdered sugar or cover with coconut. Happy eating and delicious discoveries!

Classic recipe for cookies with vegetable oil and cucumber pickle

One day I told my husband that I had baked pickle cookies. To which he jokingly told me, yeah, something sweet and a cure for a hangover). It won't really help with a hangover. But as a tasty snack or dessert for an afternoon snack, it’s a great solution.

In addition, this classic version will be without eggs, and many housewives choose it during Lent. So why don't you use it too.

The dough turns out tender, but not crumbly, I would say soft, somewhat similar to the well-known gingerbread cookies.

We will need:

  • pickled cucumber brine - 1 tbsp.
  • sugar - 5-6 tbsp
  • soda - 1 tsp
  • vegetable oil - half a glass
  • vanillin or cinnamon - 1 g

Stages:

1. Pour half a glass of odorless vegetable oil into a regular deep bowl. Then pour in the cucumber brine, add granulated sugar, soda and vanillin (cinnamon) for a fragrant note.

2. Mix all the ingredients and start adding 2-3 tablespoons of flour gradually, stir to form a firm, elastic dough. Roll it into a ball, cover with a napkin and let it lie for 10-15 minutes.

4. Place the sweets on a baking sheet and bake in the oven (temperature should be 180 degrees) for about 15-25 minutes. Depending on how you want the cookies to come out, pale or crispy. Eat for your health!

Homemade brine oatmeal cookies

The name itself speaks for itself. Yes, adding oats will make this bake even more interesting. And the recipe does not require you to have great culinary skills, and you don’t even need special molds. The treat is placed directly on a baking sheet with a tablespoon, and then eaten after baking))). The kids quickly gobble it up with tea or milk.

This option does not contain soda, like the previous ones, but if you don’t have it on hand, you can replace it with it and quench it in vinegar.

We will need:

  • brine - 90 ml
  • Refined sunflower oil – 90 ml
  • premium wheat flour - 1 tbsp.
  • oatmeal - 1 tbsp.
  • sugar - 0.5 tbsp.
  • baking powder - 1 tsp

Stages:

1. Pour the required amount of vegetable oil into a deep container and immediately pour in the brine.

3. Add wheat flour and knead the dough.

4. Then, using a tablespoon, form these lumps and place them on a baking sheet well greased with vegetable oil. Looks already impressive, doesn't it?

5. Place the leaf in the oven, which is preheated to 180-200 degrees. Bake the gourmets at the same temperature for 30-35 minutes until the cheeks are rosy. Bon appetit!

Cookies with brine and margarine with coconut flakes (lenten recipe)

I would like to note that this recipe is a godsend for fasting or those losing weight. And besides, the author made two delicacies from this dough at once - cookies and muffins. Coconut shavings are added for an original taste and you can also cook without it.

We will need:

  • cucumber pickle from lightly salted cucumbers - 250 ml
  • sugar - 1 tbsp.
  • coconut flakes - 45 g 1 sachet
  • flour - 4 tbsp. for cookies, but if you bake muffins, then take 3 tbsp.
  • vegetable oil - 250 ml
  • soda slaked with vinegar - 0.5 tsp

Stages:

1. First, combine sugar, brine and butter in a bowl and stir. Add slaked soda with coconut flakes and add flour. Stir until smooth.

Interesting! For cookies, the dough will be steeper, so use 4 tbsp. flour, and for muffins it is made more tender (3 tbsp is enough).

Cool idea! Instead of coconut flakes, you can use other products, such as candied fruits or raisins, dried apricot pieces or lemon zest. Variety is never a bad thing on your menu.)

2. Fill the muffin tins halfway or better yet 2/3 full with batter. Bake for 25-30 minutes at 185 degrees.

But to get a bunch of cookies, you need to tear off a piece from the general dough and crumple it into a ball, and then press it. And using an apple slicer, squeeze out the pattern.

3. Place the pieces on a baking sheet and bake until golden brown for 15 minutes, set the temperature a little higher than for muffins at 200 degrees.

4. Serve in a good mood and serve on a common plate so that everyone can take as much as they want. Have a nice experience!

Delicious cookies with cucumber pickle and semolina

Some friends are trying to do the opposite in order to bake sweets without margarine and eggs, but now I want to take it and demonstrate a different interpretation. You won’t believe you can add semolina to this recipe. It will turn out interesting too.

In addition, this dessert tastes somewhat like crackers. In general, if I really confused you, and you still don’t understand how it turns out, then it’s better to do it yourself.

We will need:

  • Sweet and salty cucumber pickle – 0.5 tbsp.
  • Flour – 1 tbsp.
  • Vegetable oil – 2 tbsp
  • Soda - 1 tsp
  • Semolina – 0.5 tbsp.
  • Granulated sugar – 2 tbsp

Stages:

1. Dissolve granulated sugar with cucumber brine, then pour in vegetable oil. Next, add semolina and, of course, sifted flour and soda well through a sieve.

2. Knead the dough first with a spoon in a bowl, and then on the table. You will get a ball, which you will let lie for 15 minutes under a towel.

After the required time has passed, roll it into 2-3 layers and squeeze out round pieces 5-7 mm thick on it.

3. Place the gingerbread cookies on the surface of a baking sheet, or better yet, on parchment paper. Sprinkle with granulated sugar. Bake in the oven for 15 minutes, set the temperature to 200 degrees.

4. These are the “sunburners” we got. Hot, hot, out of the oven and blush, hot!

5. I hope you successfully completed this culinary task and your golden gingerbread cookies were a success. The guests are crazy, and so are you. Bon appetit!

Brined biscuits for the poor

And in this recipe I propose to combine everything that was added earlier, coconut flakes and oatmeal. Of course, you can use any other recipe from this collection and classify it as such. But, in order not to repeat myself, I will show you another one.

The gourmets turn out to be quite crumbly and soft at the same time. You should definitely try it.

We will need:

  • Salted cucumber brine - half a glass
  • Wheat flour - 0.75 tbsp.
  • Oatmeal flour (you can grind the flakes, a glass with a slide) - 1.2 tbsp.
  • Sugar - half a glass
  • Cinnamon - 1/4 tsp
  • Vegetable oil - 1/4 tbsp.
  • Coconut flakes, it is better to take more - half a glass
  • Soda - 1/2 tsp

2. Then add coconut and flour. Mix the mixture well with a tablespoon.

4. Then let the sweets cool, remove from the baking sheet and invite everyone to a tasting. Bon appetit!

If you have leftover brine from cucumbers or tomatoes, do not throw it away under any circumstances. By adding a minimum of ingredients, using this recipe with photos you can always prepare very tasty and economical cookies with cucumber or tomato brine at home.

My grandmother taught me that a good housewife uses all her products. Therefore, the recipe for very tasty pickle cookies was used quite often in my childhood. I couldn’t understand then how such delicious sweet cookies can be made from salty brine?

For me it was some kind of magic. I suggest you solve this mystery and find out how you can quickly and deliciously prepare cookies with cucumber pickle.

Grandma's brine cookie recipe

Kitchen appliances and supplies: bowl, spoon, baking tray, sieve, whisk, molds.

Ingredients

How to choose the right products

  • You can use either tomato or cucumber brine. Be sure to strain it.
  • Sunflower oil can be replaced with olive oil.
  • To extinguish soda, instead of vinegar, you can take a tablespoon of lemon or lime juice.

Step-by-step preparation

  1. Mix 2 eggs and a glass of brine, sugar, sunflower oil and flour in a bowl.
  2. Stir, add a teaspoon of soda, a tablespoon of vinegar and a pinch of salt.

  3. Gradually add another 2-3 cups of flour, achieving a thick consistency. The dough should be dense and elastic, like dumplings.

    After kneading, leave the dough for 10 minutes, wrapped in a bag or covered with a towel.

  4. Divide the dough into several parts, each rolling out to a thickness of approximately 10 millimeters.
  5. Using molds we stamp various figures. If you don't have molds, you can use a glass or shot glass.

  6. Place them on a baking sheet. Brine dough for cookies increases during baking, so you need to place the pieces at a sufficient distance between them.

  7. Bake in the oven, which must be preheated, at a temperature of approximately 185 degrees for 15-20 minutes. As soon as it turns brown, turn off the oven. Do not overdry the cookies, otherwise they will become very hard.
  8. Cooled cookies can be lightly sprinkled with powdered sugar and served with coffee, cocoa, juice, tea and other drinks.

Recipe video

I invite you to watch a short video on making cookies in brine.

  • If you want crispier cookies, roll out the dough to about 0.5 centimeters thick.
  • To prevent the dough from sticking to the molds, you need to dip them in flour from time to time.
  • If you brush the cookies with a lightly beaten egg before baking, they will be more golden.

Other possible preparation and filling options

  • The aroma of brine is not felt at all in the finished cookies. But if you want to diversify its taste, add a teaspoon of ginger or cinnamon to the dough. You can also add a little vanilla, but do not overdo it, otherwise the cookies will be bitter. You shouldn't add more than the tip of the knife.
  • If you like experiments, add pieces of nuts, dried apricots, and raisins to the dough. These cookies can be prepared each time with a new filling.
  • Want a savory cookie option? Add just a few tablespoons of sugar to the dough and sprinkle the hot cookies with grated cheese. Place it in the oven for a couple more minutes. It will turn out very tasty!
  • Have you thought about what else you could bake for your children that would be so interesting? I suggest preparing it for tea or milk and cocoa.
  • All adults, and especially men, will certainly like it.
  • If you like surprises, prepare. Everyone will like it without exception.
  • For those who are fasting, I suggest baking Lenten cookies. Also, this option will appeal to those who like to cook “from scratch”, while doing it a lot, tasty and quickly.

Currently, the recipe for making brine cookies is somewhat forgotten, since supermarket shelves are “crowded” with all kinds of baked goods. And in the 90s of the last century, housewives carefully wrote down this recipe in notebooks and passed them on to each other, because the stores were not known for their abundance of sweets.

Tomato brine cookies turn out so tasty that it’s hard to believe that they are made from easily accessible and inexpensive products: sugar, flour, baking soda, sunflower oil and, of course, brine.

The baked goods have a delicate texture and a thin crust. In addition, I would like to note that the cookies do not go stale on the second or even third day. I offer you a step-by-step recipe with photos of delicious brine cookies that can be cooked in the oven.

Ingredients:

  • tomato pickle at room temperature – 250 ml
  • wheat flour - 4 cups without slides
  • sugar – 1 glass
  • Refined sunflower oil – 3 tbsp. l.
  • baking soda – 1 tsp. no slide.

Tomato brine cookies go perfectly with milk, aromatic tea or coffee.

Often, after we have eaten home-canned vegetables (for example), there is a brine left over that can be used to make cookies. A brine made with spices, aromatic herbs and other aromatic and flavoring additives (garlic, onion, pepper) will give the cookies a special taste. Cookies in the brine left over from pickled tomatoes or cucumbers can be prepared sweet-salty or unsweetened without sugar, which, of course, is preferable from a nutritional point of view.

We'll tell you how to make homemade brine cookies.

In any case, we use brine from a freshly opened jar; it should not have a peroxide smell; in general, it would be a good idea to strain it through a thick gauze filter.

When preparing cookies in brine, you can use not only wheat or rye flour, but also other grain flours (buckwheat, rice, corn, oatmeal), as well as cereal flakes. For wheat flour, it is better to use coarse whole grain wallpaper or spelled, peeled rye.

Cookies with tomato brine - recipe

Ingredients:

  • pickled tomato brine – 200 ml;
  • medium fat milk, kefir or unsweetened yogurt – 200 ml;
  • wheat flour (preferably mixed with buckwheat and/or rye) – about 500-600 g;
  • baking soda – 1 pinch;
  • table salt – 1 pinch;
  • granulated sugar – 50-80 g;
  • chicken egg – 2 pcs.;
  • sesame seeds – 2 tbsp. spoons;
  • butter for greasing the baking sheet.

Preparation

Mix the sifted flour with milk, sugar and brine. Add eggs and soda (if you cook with milk, first quench the soda with vinegar). Add sesame seeds. Do not knead the dough for a long time; it should not be too stiff or, conversely, watery. Roll out a not too thin layer and cut into squares or diamonds. It is better, of course, to use punchy shaped shapes or a thin glass.

Place the cookies on a baking sheet lined with baking paper or foil and greased with butter. Bake in the oven at a temperature of about 200°C for approximately 25 minutes. Serve with compote or tea.

Homemade cookies based on tomato brine with flakes - recipe

Ingredients:

  • tomato brine – about 250 ml;
  • kefir or yogurt – 200 ml;
  • or multigrain – 1 cup with a capacity of about 170 ml;
  • chicken eggs – 2 pcs.;
  • wheat or oat flour (or mixture) – 5-10 tbsp. spoon;
  • caraway seeds, coriander, fennel seeds - 1 teaspoon each.

Preparation

Pour brine over the flakes for an hour or two, let them swell well. If they are not swollen enough, add more brine. Add yogurt, eggs and sifted flour. Knead the dough with the addition of cumin seeds, coriander and fennel. You can add 3-5 drops of anise oil to the dough. You can include a little grated hard cheese in the dough - it will be delicious.

Roll out the dough into a not too thin layer and use a punch mold or glass to form biscuits (or cut the layer into diamond-shaped squares). Place the cookies on a baking sheet lined with a greased sheet of baking paper or foil. Bake in the oven for about half an hour at medium temperature.

The version of the tomato brine cookies prepared according to this recipe is much healthier than the cookies according to the recipe of the first option (see above), since it not only contains no sugar, but also contains whole grain flakes. These unsweetened cookies are good served with beer, bread and fruit kvass, and fermented milk drinks.

Homemade brine cookies should be consumed with caution and in very moderation by those who have kidney problems or high blood pressure. For this reason, cookies should not be made too small; such delicacies are eaten unnoticed.
